No-Bake Princess Snack Bars for Kids

Ingredients:

  • 2 cups rolled oats
  • 1 cup puffed rice cereal
  • ½ cup nut butter (almond, peanut, or sunflower butter for nut-free)
  • ½ cup honey or maple syrup
  • 2 Tbsp coconut oil
  • 1 tsp vanilla extract
  • 2 Tbsp pink dragon fruit powder
  • ½ cup white chocolate chips (plus extra for topping)
  • Pinch of sea salt

Directions:

  1. Mix the Magic – Combine oats + puffed rice in a big bowl.
  2. Whisk the Crown Jewels – Warm nut butter, honey, and coconut oil until smooth, then stir in vanilla.
  3. Turn It Royal Pink – Pour over the dry ingredients and stir in pink dragon fruit powder for that princess sparkle.
  4. Add the Gems – Fold in white chocolate chips (wait until it cools a little so they stay chunky).
  5. Press & Chill – Line a dish with parchment, press mixture in, sprinkle extra chocolate chips, and refrigerate until set.
  6. Rule the Kingdom – Slice into bars, serve, and watch your little royals snack happily ever after. 👸
